Happy Breakfast!

Protein! Veggies! We say it all the time, get your protein, eat more veggies! This has been my solution for breakfast for several months now and my kids have also really started to embrace it as well! It's a crustless quiche and I make a large batch at the beginning of each week and then freeze them individually so we can pull one out for breakfast and voila! We have our protein AND our veggies in just a matter of seconds in the microwave.
You can use any vegetables that you would like. I"ve used riced broccoli, butternut squash, sweet potatoes, spinach, carrots, and whatever strikes my fancy or I already have in the freezer. Saute the vegetables first in order to soften them a bit . As a time saver, there are many different kinds of riced vegetables in the frozen section so no prep necessary.
I have used sausage, bacon, turkey sausage....you can add meat or not. That's what's so great about this breakfast! You can tailor it to your taste. I usually cook the meat ahead of time so I just need to thaw it and then toss it in with the veggies.
Quick tip though, let your veggie/meat mixture cool before adding your eggs or it will end up cooking your eggs. I have put the cheese in the eggs and I've just sprinkled it on top before baking and I prefer it sprinkled on top. If you are not eating dairy then skip the cheese.
I typically bake it at 350 for about 10 minutes but since I am not actually measuring anything sometimes they take a little more time or a little less. But 10-15 minutes seems to be perfect.
Once they are cooled, put them in indivual bags and freeze. Then you can take one out each morning and pop it in the microwave! Morning serving of protein and vegetables in the books!
